Gilani Kebab (Kal Kebab) is a delicious and popular dish made from a combination of eggplant, tomatoes, and fresh herbs. This dish has a smoky and unique flavor and can easily be prepared at home.
Ingredients:
Eggplants: 3 medium
Tomatoes: 2 medium
Garlic: 3 cloves
Fresh herbs (leek, parsley, cilantro, mint): 2 cups

Instructions:
Preparing the Ingredients: Grill the eggplants until their skin is charred and they become soft. You can grill or boil the tomatoes until they soften as well. Once the eggplants and tomatoes are ready, peel the eggplants and place them along with the tomatoes, garlic, and fresh herbs in a bowl.
Mixing the Ingredients: Mash the eggplants and tomatoes using a fork or a meat tenderizer. Add the minced garlic and chopped fresh herbs. Then, season with turmeric, salt, and pepper. If you prefer a more tangy flavor, you can add some lemon juice and optionally some sumac for an extra sour touch.
Frying the Mixture: Heat a pan over medium heat and add the mixed ingredients. Stir regularly to ensure everything cooks evenly and softens. This step usually takes around 10 to 15 minutes.
